SABUDANA KHICHDI
Ingredients:
Sabudana: 2 Cup
Peanut powder: 1 Cup
Red Chilli powder: 2 Tsp (Adjust as per taste)
Salt to taste
Sugar: 1 Tsp
Oil: 1 Tbsp
Cumin seeds: 1 Tsp
Potato: 1 medium – chopped
Green Chilli: 3 – chopped (Adjust as per taste)
Lime juice: 1 Tsp
Method:
Wash and soak sabudana for 4 to 5 hours. Sabudana will turn soft after soaking. Take it in a bowl and add peanut powder, red chilli powder, salt and sugar. Mix it well.
Heat oil or ghee in a kadhai. Put cumin seeds. Once it splutters add the chopped potato. Cover and let it cook. Alternatively you can also use boiled potato here. Once the potato is cooked add green chillies.
Now add the prepared sabudana mixture. Mix it well with the potato. Cover and let it steam. Keep stirring at regular intervals to avoid forming lumps. Sabudana will turn little darker and soft. Once the sabudana is well cooked, add lime juice and mix it well. The Sabudana / Sago Khichdi is ready!
Sprinkle coriander while serving.
