Remembering Syria Through Food. Fattet Makdous Recipe with Rasha

When Rasha's husband was taken from her in the middle of the night during the war in Syria she fled to save her children. She arrived in Lebanon where she found peace, community, and support as a chef of a community-run restaurant in Saida, Lebanon. The restaurant is called Tawlet Saida and it is run by the Souk el Tayeb organization. Through this work, Rasha is able to support her children and family. She hopes that one day her children can return to Syria and fulfill their dreams. In the film, Rasha shares her story while teaching us her family recipe for Fattet Makdous. This specialty Syrian dish is comprised of a bed of fried pita layered with tomato sauce, stuffed eggplants, and a yogurt-tahini dressing. To top it off Rasha decorates the "eggplant casserole" with fried pine nuts.
