Ingredients:
Tiranga Idli:
2 cup Idli Rice
1 cup Urad dal
1 tsp Fenugreek
Rinse well and soak for 5 hours
Drain and to Mixer Grinder
Add Sufficient Dal Soaked Water
Grind to semi coarse batter
The batter should be 80% smooth 20% coarse
Rest for 12 hours
Add Sufficient salt
Heat the water in Pressure Cooker
Divide 2 cup batter in 3 cups
1.5 cups grated Carrot
1 tsp Grated Ginger
Combine well
For Green Colour
3 Bunches Spinach
1 tsp Cumin
Grind to a smooth paste
Add to the batter & combine well
Grease the Idli Plates
1 tsp Carrot mixture
1 tsp White Idli batter
1 tsp Palak Idli batter
Palace the Idli stand in Cooker
Cover steam cook 7 min on High 5 min on low 5 min rest for 5 mins
For Tomato chutney
2 tbsp Oil
300gm Ripe Tomato
1 Onion
6-7 Green Chilies
Lemon Size Tamarind
¼ tsp Turmeric
Bunch Coriander Leaves
Cook till tomatoes turn soft & mushy
Cool completely
1 tbsp Oil
Pudina chutney
2 tsp Oil
3-4 Green Chillies
Fry 2-3 min
1.5 tsp Coriander
Fry well
1 Tomato Cubes
Fry till soft
1 Bunch Pudina
½ Bunch Coriander leaves
Fry till soft
Marble Size Tamarind
Sauté for 30 sec
Add Fried Chillies
Fried Pudina
Salt
Sufficient water for a paste
For Coconut Chutney
½ Fresh Coconut
1 Green Chilli
2 tbsp Roasted chana
Salt
Marble size Tamarind
1 tsp Sugar
Sufficient water to a smooth paste
2 tbsp Oil
1.5 tsp Mustard
1 tsp Urad dal
3 Dry Chilies
1 tsp Cumin
2 Sprigs Curry leaves
Combine the Tadka in the chutneys
Remove the idli from the cooker
Loosen the idli
Dip the spoon in water
De-mould the Idli
Serve Hot with Tiranga Chutneys(Tomato Coconut Ginger)
